Grilled Shrimp Tacos with Cilantro Butter

Directions:

1. Set up your gas grill for direct grilling, exchanging for a fresh tank of Blue Rhino propane if you are running low.
2. Light the grill according to the manufacturer’s instructions and preheat to high.
3. Place the shrimp in a bowl and season with salt and pepper.
4. Stir in the orange and lime juices and let the shrimp marinate for 15 minutes.
5. On your grill's side burner, melt the butter in a small saucepan.
6. Add the cilantro and garlic and cook until sizzling, but not brown, about 2 to 3 minutes.
7. Remove the pan from the heat and set aside, but keep warm.
8. Place the warm tortillas in a cloth-lined basket.
9. Place the sour cream, shredded cabbage, avocados (if using), and lime wedges in an attractive bowl.
10. If using a grilling basket, preheat it on the grill grate and coat it with oil. Otherwise, thread the shrimp on skewers for easier turning.
11. Brush and oil the grill grate.
12. Grill the shrimp until browned and cooked through, 2 minutes per side, basting with the cilantro butter.
13. Remove the shrimp and arrange the shrimp on a platter.
14. To serve, have each eater place a few shrimp on a tortilla. Top with cabbage, sour cream, and the salsa.
15. Serve with lime wedges and grilled avocados, if using.
