Ingredients: 1 pork knuckle (1 inch cubes); pork sausage (As needed basic, cut into 1 ½ inch pieces); fresh bay leaves (As needed); kosher salt (As needed); black pepper (As needed, ground); 1 lemon (charred and juiced); 1 cup honey; 2 cups balsamic vinegar; 1 cup olive oil; 1 red onion (thinly sliced); 3 kiwi fruit (chopped)

Cook Time: 5 - 10 minutes

Ingredients:

1 pork knuckle (1 inch cubes)
pork sausage (As needed basic, cut into 1 ½ inch pieces)
fresh bay leaves (As needed)
kosher salt (As needed)
black pepper (As needed, ground)
1 lemon (charred and juiced)
1 cup honey
2 cups balsamic vinegar
1 cup olive oil
1 red onion (thinly sliced)
3 kiwi fruit (chopped)

Directions:

Combine marinade ingredients.
Add pork knuckle to marinade and let sit overnight.
To assemble skewer, alternate fresh bay leaves, Pork Knuckle, and sausage using 3 pieces of each.
Season with salt and pepper and grill until pork is cooked through.
Finish with charred lemon juice and olive oil.
