Grilled Eggplant

Makes: 4 servings
Prep Time: 5 - 10 minutes
Cook Time: 5 - 10 minutes

Ingredients:

1 lb Eggplant
1 tbsp Olive Oil
1 tsp Worcestershire Sauce
2 tsp Balsamic Vinegar
2 Gloves Garlic, minced
2 tbsp Parsley
Salt, to taste
Pepper, to taste

Directions:

Preheat grill to medium-high.
Clean the eggplant, cut into 3/4 in thick rounds.
In a large bowl, combine all the ingredients and let set for 5-10 minutes.
Place the eggplant on the grill.
Grill for 4-5 minutes.
Flip and grill for another 4-5 minutes.
Once tender and crisp, remove from the grill.
Serve and enjoy.
