Baari Rack of Lamb

Directions:

1. Remove lamb from the packaging, pat try and place in the refrigerator to fry for 4 hours.
2. Preheat grill to 300ºF.
3. Remove lamb from refrigerator.
4. Score fat side of Lamb with a sharp knife. Do NOT cut meat, only the fat layer.
5. Rub lamb with olive oil.
6. Season lamb with kosher salt, black pepper, rosemary and lemon zest.
7. Squeeze lemon juice over Lamb.
8. Place lamb on the grill.
9. Rotate and flip lamb every from 5 minutes.
   Note: Make sure the fat side is charred dark brown.
10. Grill lamb until desired doneness.
    Note: Medium rare (115-120ºF) is about 25-30 minutes.
11. Remove lamb and let rest for 5 minutes.
12. Serve and enjoy.
