Ingredients:
8 Chicken thighs
5 Tbsp Garlic, minced
3/4 cup Onions, chopped
4 Tbsp Sage
4 Tbsp Rosemary
4 Tbsp Thyme
4 Lemons, cut in half
2 Lime, cut in half
4 Tbsp Olive Oil
2 tsp Salt
1 tsp Pepper
1 Herb mop
Additional Items Needed:
1 Sealable plastic storage bag
1 Medium bowl
1 Grilling spray
Latex gloves
Grilling Brush
Grilling Tongs
Directions:
Place chicken thighs in sealable plastic storage bag.
Add 3 Tbsp garlic, 1/2 cup onions, 2 Tbsp Sage, 2 Tbsp Rosemary and 2 Tbsp Thyme to the plastic bag.
Squeeze 2 lemons and 1 lime into the plastic bag.
Add 2 Tbsp olive oil, 1 tsp salt and 1/2 tsp pepper to the plastic bag.
Seal bag.
Move chicken around in the bag. Make sure to get coating on all the chicken thighs.
Let chicken marinade.
Note: this can be prepared early and stored up to overnight.
In a medium bowl, add remainder of the garlic, onions, Sage, Rosemary, Thyme, salt, pepper, lemons, lime and olive oil and mix together.
Make your
herb mop
.
Preheat grill to 400 F.
Spray cooking surface with grilling spray.
Place chicken on the grill.
After a couple of minutes, flip chicken thighs over.
Baste thighs with basting mix and herb mop.
After a couple of minutes, flip chicken thighs over and baste again.
Leave the herb mop on the cooking grid.
When chicken reaches 165ºF remove from the grill.
Serve and enjoy.
