Ingredients:
1 (12 lb)
Whole Turkey (if Frozen, thawed completely)
Favorite Seasoning
Vegetable Oil, if needed for basting
Roasting Pan / Foil Pan
Wood chips, if desired"
Directions:
Remove giblets, neck and any other innards.
Pat dry with paper towels.
Using your fingers, slowly separate the skin from the breast area and drumsticks.
Insert your seasoning in the layer between the skin and the meat. Also, coat the inside cavity of the turkey.
DO NOT cooking your stuffing in the turkey cavity.
Place the turkey on a plate and loosely cover with foil. Place in the refrigerator overnight.
If using wood chips, prepare wood chips per instructions on wood chip packaging.
Remove the turkey from the refrigerator and place on the Roasting Pan/Foil Pan.
Make sure to fold the wings under the body and tie the legs together.
Preheat the grill to 375ºF and prepare for indirect cooking.
If using wood chips, place on the grill.
Close the lid and grill for 2 - 3 hours, or until meat thermometer reaches 170ºF.
Tip: If needed, you can coat the skin with a thin layer of vegetable oil.
Change/add wood chips as necessary.
When fully grilled, remove from the grill and let rest for 20-25 minutes.
Cut and serve.
