Grilled Pimento Cheese Bacon Sandwiches

Ingredients:
8 Slices Sourdough Bread
3 tbsp Mayonnaise (or softened, unsalted butter)
6 oz Pimento Cheese (homemade or store bought)
4-6 slices Bacon, fully cooked and crumbled
Directions:
Preheat grill with griddle topper or Blue Rhino Razor for direct grilling over medium heat.
Spread one side of each slice of bread with mayonnaise (or softened butter).
Place the four (4) slices mayonnaise side down on the plate.
Spread the pimento cheese on each of the slices of bread. Top with bacon crumbles.
Place the other slices of bread on top of the cheese, mayonnaise side up.
Place the sandwiches on the griddle.
Grill for about 4 minutes, until golden.
Carefully flip the sandwiches over and grill for another 4 minutes, until golden.
Remove from the griddle and let rest for 5 minutes.
Serve and enjoy.
