Grilled Bone-in Pork Chops

Ingredients:
8 Bone-in Pork Chops (half inch thick; about 3 ounces each)
1/2 cup Honey
1/4 cup Vegetable Oil
2 tbsp Apple Cider Vinegar
2 tsp Ground Cumin
1 tsp Red Pepper Flakes
2 tbsp Butter
1 tsp Minced Chives
1 tsp Parsley (finely minced)
Salt, to taste
Freshly Ground Black Pepper, to taste
Directions:
In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Remove half to make sauce later.
Place pork chops and marinade in a resealable plastic bag.
Place in refrigerator for at least 1 hour.
Preheat grill to medium-high.
Remove the pork chops from the bag and lightly sprinkle with salt and pepper.
Place pork chops on the cooking grid and grill until the pork chop releases from the grill, or about 4 minutes.
Flip and grill another 3 minutes or until internal temperature is 145ºF.
Remove from the grill and place in a dish with tall sides (to collect the juices).
Let pork chops rest for 3 minutes.
On the grill's side burner add the remaining marinade into a sauce pan and bring to rapid boil.
Turn off heat and whisk in butter and juices from rested meat.
Place pork chops on a plate, pour marinade mixture over the pork chops, and top with herbs.
Serve and enjoy.
