Ingredients:
1 lb Pork tenderloin, cut into 1-inch cubes
1 c Liquid Margarita mix
1 clove Garlic, minced
2 tsp Butter
2 tsp Lime Juice
1/4 tsp Sugar
1 tbsp Parsley, minced
1 tsp Ground coriander
2 medium Ears of Corn, cut into 8 pieces
1 large Green pepper, cubed
1 Gallon zipper storage bag
4 Skewers soaked in water
Directions:
In a small bowl, combine margarita mix, garlic and coriander, and mix well.
Place pork cubes in the storage bag, add marinade and shake thoroughly.
Place storage bag in the refrigerator and let marinate for at least 45 minutes.
In a small bowl, mix butter, lime juice, sugar and parsley.
Preheat grill to medium-high.
Stack pork cubes, corn and peppers onto skewers, alternating meat and vegetables.
Place on the grill for 15-20 minutes, turning often.
Baste with the butter mixture.
Remove from grill when pork is fully cooked.
Serve and enjoy.
