Jalapeno Bacon Relish

Ingredients: 1/2 md Red onion, finely diced; 2 Jalapeno peppers, finely chopped... your choice whether or not to leave to seeds; 1/2 C Apple cider vinegar; 2 T Brown sugar; 1/4 t Fine sea salt; 4 strips Crisp cooked thick-cut bacon, finely chopped; 1 to 2 t Dijon mustard

Makes: 4 servings
Prep Time: 10 - 20 minutes
Cook Time: 5 - 10 minutes

Ingredients:

1/2 md Red onion, finely diced
2 Jalapeno peppers, finely chopped... your choice whether or not to leave to seeds (I did)
1/2 cup Apple cider vinegar
2 tbsp Brown sugar
1/4 tsp Fine sea salt
4 strips Crisp cooked thick-cut bacon, finely chopped
1 to 2 tsp Dijon mustard

Directions:

Add chopped onions and jalapeños to a small mixing bow.
Stir together the vinegar, brown sugar and salt until the sugar and salt have dissolved.
Pour over the onion mixture and let soak for 1/2 hour.
Drain and then stir in the bacon and mustard.
The relish will keep covered in the refrigerator for up to 5 days.
