Grilled Tofu & Vegetable Kebabs with a Spicy Yogurt Marinade

Directions:

1. If using wooden skewers, soak in water for a minimum of 15 minutes.
2. Preheat grill to high.
3. Cut the firm tofu into one inch square pieces.
4. Place on a skewer in the following order: mushroom cap (slide down to the end of the skewer), tofu, mushroom cap, green zucchini, tofu, green zucchini, red pepper, tofu, red pepper, yellow pepper, tofu, yellow pepper, eggplant, tomato wedge.
   Note: Make sure each vegetable to snug against the tofu to hold everything in place.
5. Repeat for other skewer(s).
6. Set skewers aside.
7. In a large bowl combine marinade ingredients.
   Note: Add water in stages and as necessary to make the marinade spreadable on the kabobs.
8. Using a basting brush, coat both sides of the kabobs with the spicy yogurt marinade.
9. Using heat resistant gloves, apply some of the avocado oil to the paper towel and carefully coat the cooking grates.
10. Place the kabobs and green onion onto the cooking grates.
11. After about 4-6 minutes, flip the kabobs and baste again with the spicy yogurt marinade.
12. After 4-6 minutes, or when the vegetables are tender and the tofu starts to caramelize, remove the kabobs from the grill and place on a plate.
13. Top the kabobs with the green onion and serve with hummus (or your favorite side).
14. Serve and enjoy.
