Achiote Grilled Pork Tenderloin

Directions:

1. Place all of the marinade ingredients in a blender and blitz to combine. 
2. Trim away the skin from the tenderloin and place in a resealable plastic bag. 
3. Pour in the marinade and seal the bag. 
4. Marinate in the refrigerator for 6 hours or as long as over night.
5. Remove pork from the marinade and discard the marinade. 
6. Blot the tenderloin(s) with paper towels and season with salt, freshly ground black pepper and a drizzle of olive oil. 
7. Let sit at room temperature while prepping the grill.
8. Set up grill for direct cooking over medium-high heat. 
9. Brush and oil grate when ready to start cooking. 
10. Place pork on the hot oiled grill. 
11. Cook for 3 to 5 minutes on each side (four sides) for a total of 14 to 18 minutes or until internal temperature registers a minimum of 145˚F (medium rare) and up to 160˚F (medium).
12. Remove tenderloin(s) from grill and let rest for 5 minutes before slicing. 
13. Slice across the tenderloins on the bias and serve.
