Ingredients:

Chicken Breast
1
Deli off the bone Ham
Baby Swiss cheese
4-6 strips
Applewood Smoked Bacon
Favorite Chicken Rub
Favorite BBQ Sauce
Toppings:
• Meat Mallet / Tenderizer
• Tooth Picks
• Aluminum Foil
Directions:
Preheat grill to medium on 1 side.
Fillet the chicken breast open so it lays flat.
Using the meat mallet pound the breast to same uniform thickness about 3/8 of inch thick.
Dust both sides of the breast with rub.
Layer 3-4 slices of ham on the breast and 2-3 slices of baby Swiss cheese.
Roll up the breast keeping pressure on it to hold in the ham and Swiss cheese.
Wrap slices of bacon around the breast using the tooth pick.
Overlap each piece just a little bit and repeat until it is completely covered.
Place a smoker box with apple chips on the grill in the middle.
Place the rolls on the cool part of the smoker letting them slow cook and get some smoke.
Turning them every 10-12 minutes.
Once they are at 130°F internal temp, move them to the hot side of the grill.
Grill for 5 minutes and then turn a quarter of a turn and keep going until the internal temp is 160°F.
Brush on your favorite sauce, turning often until you get all sides coated.
Remove from the grill, tent with aluminum foil and let rest for 5-8 minutes.
Serve with your favorite sauce and sides.
